The popularity of barrel-aged beers has exploded as craft brewers look to produce unique and complex beers to meet the demand of a growing craft beer drinking population. In the 20th century as new technology created stainless steel aging tanks for beer, most craft brewers abandoned old-style barrel aging. Belgium Lambic and Flanders Sour ale producers were some of the only brewers who continuously aged their beer in oak barrels.

Today, the art of barrel-aging has exploded and craft brewers are aging stouts, barleywines, fruit beers, Belgian ales and other styles in a wide variety of oak barrels. Bourbon barrels remain the most popular type for aging beer, but brandy, plain oak, rum, whiskey, and wine barrels are being used to produce complex and flavorful beers.
