Irish Quarter

Cocktail twist on the Latin Quarter, using Irish Whiskey.

Ingredients:

2 oz. Bushmills 16 Year Single Malt Whiskey

1/2 oz. honey syrup

2 dashes Bittermans Xocolatl Mole Bitters

2 dashes Peychaud bitters

absinthe rinse

Instructions:

Add a splash of absinthe and ice to an old-fashinoned cocktail glass and swirl to coat the inside.

Add Irish Whiskey, honey syrup, and bitters to shaker glass filled with ice. Stir to mix.

Empty ice from old-fashioned glass and swirl again to coat inside.

Strain the shaker into the the glass and serve.
