The Summer is a great time to brew Saison beers, as the Belgian Farmhouse Saison yeast strains work well in high temperatures. The optimal temperature range for most Saison yeasts is 68-75F. This includes the yeast strain for the gold standard of Saisons, Saison Dupont. White Labs WLP 565 and Wyeast 3724 are the Saison Dupont strain, and are readily available at homebrew stores. Other good yeast options are Wyeast 3726 PC Farmhouse Ale which works up to an astonishing 95F, or White Labs WLP568 Belgian Saison which works up to 80F.

This recipe produces a beer at 6.7% ABV, with 35 IBUs. The malt bill included Oats and Flaked Wheat, and the beer is spiced with orange peel, black pepper, grains of paradise, and ginger.

This is a big hoppy Saison, at 8% ABV, and 64 IBUs. The beer is modeled after Praire Hop, by Prairie Artisanal Ales. Simcoe and Citra hops are used in the boil and for dry-hopping.
This beer is a hybrid Saison-Wit style, at a 5.8% ABV,with 25 IBUs. The malt bill includes Flaked Triticale and Honey Malt. The beer is spiced with coriander and orange peel. Fermentation is done with a mix of Saison and Wit yeasts.
A dark and spicy Saison which weighs in at 7.3% ABV, with 35 IBUs. The malt bill includes midnight wheat, rye, dark crystal malt, and oats. The beer is spiced with black pepper, coriander, grains of paradise, and star anise.
