All Grain Smoked Scottish Ale Recipe
Profile: HomeBrew recipe for a Smoked Scottish Ale, similar to Against The Grain Scotland Charred. Rich and malty with flavors of sweet caramel, toasted malts, and smoke. Medium-bodied and moderately hopped with low bitterness.
11 lbs Maris Otter
3 lbs Briess Cherrywood Smoked Malt
1 lb Dark Munich
2 oz. Roasted Barley
1/2 oz. Nugget 13%a, 60 minutes
1/2 oz. Nugget 13%a, 5 minutes
Mash all grains with rice hulls for 1 hour at 151 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment at 64-66 degrees.
