All Grain HomeBrew American Stout Recipe

Profile: HomeBrew recipe for an American Stout, similar to Deschutes Obsidian Stout. Opaque black in color with a Medium body and a roasty profile. Moderately high in hop bitterness.



10 lbs Pale 2-row Malt

12 oz. Roasted Barley

3 oz. Black Patent

8 oz. Crystal 80

8 oz. Carapils

8 oz. Light Munich

8 oz. White Wheat Malt


1 oz. Nugget 13%a, 60 minutes

1/2 oz. Northern Brewer 9%a, 30 minutes

1/2 oz. Northern Brewer 9%a, 15 minutes

1/2 oz. Willamettte 5%a, at flameout

Yeast: American Ale – Wyeast 1332 Northwest Ale


Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 63-68 degrees.

Rack to keg or secondary and age for 2-3 weeks.

    Brewed this today as an extract recipe. Used 6 pounds of pale malt dme for the 2 row. Looking for good things from this one!
