All Grain Session Saison Recipe

Profile: HomeBrew recipe for a single-hopped Session-Style Saison brewed with 100% Azacca hops. Crisp and refreshing. Azacca hops provide flavors of lime citrus, pineapple, and tropical fruit. Moderate hop bitterness.

Ingredients:

Malts

9 lbs Pilsner 2-row Malt

12 oz. Flaked Wheat

Hops (pellets):

1/2 oz. Azacca 15%a, 60 minutes

1/2 oz. Azacca 15%a, 10 minutes

1/2 oz. Azacca 15%a, at flameout

YeastWhite Labs WLP 565 Saison I or Wyeast 3724 Belgian Saison

Instructions:

Mash all grains with rice hulls for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above

Ferment at 68F.

Rack to secondary and age for 5 weeks.

    Brewed this back in late Sept. Be cautious on the fermentation temp, the Wyeast 3724 stalled at around 1.030 @ 68 degrees. I was informed this yeast is common to do so. Next time i will start at 68 degrees F and ramp up after a few days into fermentation. I ended up re-pitching and finished out at 1.008. Great recipe overall, Azacca hops go great with the funk of the yeast.

    Love Azacca hops! They have such a great array of aromas and flavors. This Saison looks sweet for a spring session ale.
