All Grain Smoked Black Rye IPA Recipe

Profile: Dark, smoky, and hoppy ale with bold flavors and a big bitter finish. Calculated at 73% brewhouse efficiency.



7 lbs Pale 2-row

5 lbs Briess Cherrywood Smoked Malt

2 lbs Rye Malt

8 oz. Crystal 40

6 oz. Chocolate Malt

6 oz. Carafa III

Hops (Pellets)

1 oz. Columbus 15%a, 60 minutes

1/2 oz. Columbus 15%a, 30 minutes

1 oz. Simcoe 13%a, 15 minutes

1 oz. Simcoe 13%a, at flameout

YeastWhite Labs WLP001 California Yeast


Mash all grains for 1 hour at 152 degrees.

Sparge at 172 degrees.

One hour boil with hop regimen above.

Ferment at 66 degrees.

Rack to keg or secondary and age for 5 weeks.

    Are you using normal CARAFA III or special/de-husked?

    Really like this recipe, brewed mine with Manuka smoked malt and ended up at 9.4% abv. Nice bitterness, and the smoke and spice from the rye to sit well on the palate
