All Grain HomeBrew Black Saison Recipe

Profile: HomeBrew recipe for a Belgian Farmhouse Black Saison, similar to New Holland’s Four Witches. Dark, spicy, and mysterious with classic farmhouse flavors. Brewed with four spices.



12 lbs 2-Row Pale Malt

1 lb Midnight Wheat (dark wheat malt)

12 oz. Rye Malt

8 oz. Flaked Wheat

8 oz. Flaked Oats

6 oz. Crystal 120


1/2 oz. Nugget 13%a, 60 minutes

1 oz. Cascade 6%a, 30 minutes

1 oz.  Mt. Hood 5%a, 10 minutes


1 Tbsp fresh crushed black peppercorns

1 Tbsp fresh crushed black coriander

1 Tbsp grains of paradise

3 whole star anise pods

YeastWhite Labs WLP 565 Saison I or Wyeast 3724 Belgian Saison


Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Stir in spices five minutes before flameout.

Ferment warm at 70F.

Rack to keg or secondary and age for 5 weeks.
