All Grain Imperial Stout HomeBrew Recipe

Profile: HomeBrew recipe for a Imperial Stout similar to Boulevard Dark Truth. Rich, roasty, creamy, and chocolaty with flavors of dark fruit, roasted coffee, chocolate, and herbal hops. Smooth finish with medium hop bitterness. Fermentation with Belgian ale yeast adds an extra layer of fruit and spice flavors to a complex malt bill.

Ingredients:

Malts

14 lbs Pale 2-row

1 lb Wheat Malt

14 oz. Roasted Barley

12 oz. Flaked Oats

10 oz. Rye Malt

8 oz. Amber Malt

8 oz. Caramel 60

6 oz. Caramel 120

6 oz. Honey Malt

4 oz. Chocolate

4 oz. Chocolate Rye

Hops

1 oz. Magnum 14%a, 60 minutes

1 oz. Zeus 15%a, 30 minutes

1 oz. Perle 11%a, 15 minutes

1 oz. Citra 11%a, at 10 minutes

1 oz. Citra 11%a, at flameout

Other: 10 oz. brown sugar, 6 oz. dark brown sugar

YeastWyeast 5522 Belgian Ardennes or White Labs WLP550 Belgian Ale

Instructions:

Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above. Stir in sugar during last 15 minutes of the boil.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 10 weeks.
