All Grain 100% Brett Fermented Red Rye IPA Recipe
Profile: Red Rye Ale fermented with a strain of Brettanomyces which creates clean tropical fruit aromas and flavors. Hopped with Amarillo and Galaxy hops, which add flavors of tangerine, citrus, and tropical fruit. Mild spice and grain notes from the rye malt. Dry finish with moderate hop bitterness and light tartness.
8 lbs Maris Otter Pale
3 lbs Rye Malt
1 lb CaraRed
8 oz. Crystal 80
6 oz. CaraPils
6 oz. Flaked Barley
1/2 oz. Galaxy 10%a, 60 minutes
1/2 oz. Amarillo 8%, 20 minutes
1 oz. Galaxy 10%a, 10 minutes
1 oz. Amarillo 8%, 5 minutes
Mash all grains for 60 minutes at 150 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment warm at 70-75F for 12 weeks to let the slow working Brett yeast perform.
