All Grain 100% Brett Fermented Blonde Ale Recipe
Profile: Smooth blonde ale fermented with a unique strain of Brettanomyces which creates clean tropical fruit aromas and flavors. Hopping with Amarillo and Galaxy hops adds compliment of tangerine, light citrus, and passion fruit. Dry finish with moderate hop bitterness.
8 lbs Pale 2-row
1 lb Crystal 40
8 oz. Honey Malt
6 oz. CaraPils
6 oz. Flaked Barley
1/2 oz. Galaxy 10%a, 60 minutes
1/2 oz. Amarillo 8%, 20 minutes
1/2 oz. Galaxy 10%a, 10 minutes
1/2 oz. Amarillo 8%, 5 minutes
Mash all grains for 60 minutes at 150 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment warm at 70-75F for 12 weeks to let the slow working Brett yeast perform.
