All Grain HomeBrew Czech Style Black Lager Recipe
Profile: HomeBrew recipe for a smooth Czech Black Lager, similar to BrewDog Zeitgeist. Medium-light bodied with smooth toasted malt flavors, mild caramel sweetness a touch of chocolate, and light piney hop notes. Crisp finish with moderate bitterness. Black color comes from de-bittered black malt which adds the dark color without producing any roasty or bitter dark malt flavors.
8 lbs Pilsner Malt
2 lbs Munich Light
8 oz. Caramel 80
4 oz. Chocolate
4 oz. Carafa III
1 oz. Cascade 6%a, 60 minutes
1/2 oz. Cascade 6%a, at 20 minutes
1/2 oz. Cascade 6%a, at flameout
Mash all grains for 1 hour at 150 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Chill down to 50F and pitch yeast.
Ferment for about 10-14 days until primary fermentation just finishes.
Diacetyl Rest: Raise beer temp to 62-65F for 2-3 days.
