All Grain HomeBrew Imperial Stout Recipe

Profile: HomeBrew recipe for a strong Imperial Stout, similar to Cigar City Hunahpu’s Imperial Stout. Full-bodied with rich flavors of roasted coffee, vanilla, chocolate, and spice. Flavored with cacao nibs, vanilla beans, cinnamon, and chiles.



10 lbs Maris Otter

10 lbs Pale 2-row

1 lb.  Roasted Barley

8 oz. Chocolate Malt

8 oz. Crystal 80

8 oz. Crystal 90

12 oz. Flaked Oats


2.5 oz. Magnum 14%a, 60 minutes

1 oz. East Kent Goldings 5%a, 30 minutes

2 oz. East Kent Goldings 5%a, 10 minutes

Yeast:White Labs WLP090 or  White Labs WLP050

Other: 1 cup cacao nibs, 4 whole vanilla beans, 3 whole dried Ancho Chiles, 2 whole dried Pasilla Chiles, 3 cinnamon sticks


Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 63-68 degrees (use a big yeast starter)

Rack to keg or secondary vessel which a larger opening than a carboy. Add all the other ingredients to a nylon bag with stainless steel balls for weighting. Tie the bag off and place into keg or secondary vessel. Age for 5-6 months.
