All Grain Oatmeal Baltic Porter Recipe

Profile: HomeBrew recipe for an Oatmeal Baltic Porter, similar to Deep Ellum Double Brown Stout. Full-bodied, chocolaty porter, with a creamy texture and flavors of chocolate, dark fruit, and earthy hops. Smooth finish with low hop bitterness.

Ingredients:

Malts

9 lbs Pale 2-row

1 lb Munich Light

1 lb Munich Dark

12 oz. Flaked Oats

12 oz Brown Malt

12 oz. Crystal 120

8 oz. Chocolate (de-husked)

8 oz. Rye Malt

Hops

3/4 oz. Northern Brewer 5%a, 60 minutes

1/2 oz. US Goldings 5%a, 20 minutes

1 oz. Mt. Hood 5%a, 10 minutes

Other: 8 oz. Black Strap Molasses

YeastWyeast 2112 California Lager or White Labs WLP810 San Francisco Lager

Instructions:

Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above. Add molasses after 30 minutes of boiling.

Ferment at 60-64 degrees.

Rack to a secondary and cold-age at 35F for 2-3 weeks.

    Have this in the fermenter right now. Will try to update when it’s done! I added 1/2 lb of smoked malt and will add raspberry to the secondary. Going for a smoked raspberry (smogberry!) with this as the base.
