All Grain HomeBrew Recipe for a Belgian Farmhouse Wit
Profile: HomeBrew recipe for a Farmhouse Wit similar to Deep Ellum’s Farmhouse Wit. Recipe uses a malt bill for a medium-bodied Saison, and is spiced like a Wit. Moderate hop flavor and bitterness. A blend of Belgian Wit and Belgian Saison yeasts is used to get characteristics of both beer styles. Finishes beer is crisp and refreshing.
Ingredients:
Malts
7 lbs Pislner Malt
7 oz. Vienna Malt
8 oz. Flaked Triticale (or: 4 oz. Flaked Wheat, 4 oz. Flaked Rye)
8 oz. Honey Malt
Hops
1/4 oz Summit 18%a, 60 minutes
1/2 oz. Liberty 5%a, 10 minutes
1/2 oz. Pailisade 10%, 10 minutes
Other
1 tablespoon fresh crushed coriander seed, 1/4 cup grapefruit peel, and 1/8 cup fresh lemongrass
Yeast Blend: White Labs WLP400 Belgian Wit with White Labs WLP565 Belgian Saison I or Wyeast 3944 Belgian Witbier with Wyeast 3724 Belgian Saison
Instructions:
Mash all grains with rice hulls for 1 hour at 148 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
At flameout stir in bitter orange and coriander.
Chill and pitch both yeast strains at once.
Ferment at 65-68 degrees.
