All Grain Berliner Weisse Recipe

5 lbs German Pilsner Malt

5 lbs. Red Wheat Malt

10 oz. Acidulated Malt


1 oz. German Spalter 4%a, 30 minutes

YeastWhite Labs WLP630 Berliner Weisse Blend

Other: 1 lb. rice hulls


Mash all grains with rice hulls for 1 hour at 148 degrees.

Sparge at 170 degrees.

One hour boil.

Primary fermentation at 65-68 degrees for one week.

Rack to keg or secondary and age for 3 months to allow Lacto cultures to produce sour flavors.
