All Grain Sahti Recipe
Profile: HomeBrew recipe for Sahti, a unique beer style which originates from Finland. Hazy pale orange with notes of pine, juniper, and sweet malt. Mildly spicy and tart finish.
6 lbs Rye Malt
5 lb Munich Malt
1 lb. Flaked Oats
8 oz. Acidulated Malt
1.5 oz. Perle 8%a, Mash-hopped
Yeast: Wyeast 1007 German Ale Yeast
Other: 12 oz rice hulls (helps with sticky rye mash). Large basket of juniper branches.
Layer the juniper branches onto the bottom of your mash tun.
Mash all grains with rice hulls and hops for 90 minutes at 152 degrees.
Sparge at 170 degrees.
15 minute boil.
Chill wort, pitch yeast, and ferment at 60-64 degrees for 5 days.
