All Grain HomeBrew American Stout Recipe

Profile: HomeBrew recipe for an American Stout, similar to GoodLife Pass Stout, brewed in Bend, OR. Pacific Northwest style stout brewed with 100% Cascade hops and seven malts. Pours black with a thick tan head. Aromas of chocolate, roasted coffee, and dark fruit. Rich, creamy, and full-bodied with smooth dark malt flavors and moderately high hop bitterness.

Ingredients:

Malts

11 lbs Pale 2-row Malt

12 oz. Midnight Wheat

10 oz. Munich

8 oz. Flaked Oats

6 oz. Chocolate Malt

6 oz. Crystal 120

6 oz. Franco-Belges Kiln Coffee

Hops

3 oz. Cascade 6%a, 60 minutes (optional use 1.25 oz. Columbus 15%a instead to lower hop bill)

1 oz. Cascade 6%a, 30 minutes

1/2 oz. Cascade 6%a, 20 minutes

1/2 oz. Cascade 6%a, at flameout

Yeast: Wyeast 1332 Northwest Ale or White Labs WLP051 California Ale V

Instructions:

Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 63-68 degrees.

Rack to keg or secondary and age for 5-6 weeks.
