Profile: HomeBrew recipe for a Gratzer-Style Smoked Wheat Beer, Similar to Westbrook Brewing Gratzer. Light-bodied with crisp wheat and smoky flavors.
6 lbs Weyermann Oak-Smoked Wheat Malt
1 lb Red Wheat Malt
2 oz. Midnight Wheat Malt
1/2 oz. Polish Lublin 4%a, 60 minutes
1/2 oz. Polish Lublin 4%a, 15 minutes
12 oz. Rice Hulls (mix with grain in mash – helps the sparging with a sticky wheat mash)
Step Mash all grains with rice hulls:
125 degrees for 30 minutes
150 degrees for 60 minutes
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment at 63-67 degrees.
