All Grain Greek Summer Saison Recipe

Ingredients:

1,83 kg Pale Malt 31,2 %
1,83 kg Pilsner 31,2 %
1,83 kg Wheat Malt, Pale 31,2 %
0,37 kg Carared 6,4 %
18,40 g Simcoe [13,00 %] – Boil 25,0 min 19,0 IBUs
13,80 g Centennial [10,00 %] – Boil 15,0 min 7,8 IBUs

Yeast: 1 pkg Belle Saison (Lallemand #)Yeast

Instructions:
Saccharification 37,59 l of water at 66,7 C for 75 min
Mash Out 75,6 C over 7 min at 75,6 C for 10 min
OG 1041, fermentation from 21 to 30 degrees eventually for Saison yeast to work until SG1003 in 10 days one week secondary until it drops more (FG 1001) 200gr Dextrose for 2.8 Vols CO2 (21 liters)
