All Grain HomeBrew Smoked German Schwarzbier Recipe

Profile: HomeBrew recipe for a Smoked German Style Schwarzbier, similar to Jack’s Abby Smoke & Dagger. Smooth dark lager with smoky flavors and mild roasty chocolaty notes. Crisp finish with moderately low hop bitterness.



6 lbs German Pilsner 2-row

3 lbs Beechwood Smoked Rauch Malt

2 lbs Munich Light

8 oz. Crystal 60

8 oz. Carafa III

2 oz. Chocolate Wheat


1/2 oz. German Magnum 9%a, 60 minutes

1/2 oz. Hallertauer 5%a, at 15 minutes

Yeast: White Labs WLP830 German Lager Yeast or Wyeast 2206 Bavarian Lager


Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Chill down to 50F and pitch yeast.

Ferment for about 10-14 days until primary fermentation just finishes.

Diacetyl Rest: Raise beer temp to 62-65F for 2-3 days.

Rack to keg or secondary and start cold-aging process. If possible taper temperature down 5-7 degrees per day from Diacetyl rest to 35F. Cold age at 35F for 4-5 weeks.
