All Grain Mosaic Saison Recipe

Profile: HomeBrew recipe for a single-hopped Saison brewed with 100% Mosaic hops. Huge bouquet of tropical fruit, blueberry, and light pine aromas. Fruity and earthy flavors. Dry finish with medium bitterness.

Ingredients:

Malts

10 lbs 2-Row Pale Malt

2 lbs Wheat Malt

1 lb Rye Malt

8 oz. Flaked Oats

Hops (pellets):

1 oz. Mosaic 12%a, 60 minutes

1/2 oz. Mosaic 12%a, 30 minutes

1/2 oz. Mosaic 12%a, 15 minutes

Dry Hop: 1 oz Mosaic

YeastWhite Labs WLP 565 Saison I or Wyeast 3724 Belgian Saison

Instructions:

Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 68F.

Rack to secondary and age for 5 weeks, then add dry-hops for 7 days before tapping or bottling.
