All Grain HomeBrew Double Cream Ale Recipe

Profile: HomeBrew recipe for a Double Cream Ale, similar to Newburgh Aces Wild. Aromas of lemony citrus and light mint. Medium-bodied with a creamy mouthfeel, mildly sweet maltiness, and herbal notes. Medium level of hop bitterness. Dry-hopped with Sorachi Ace hops, and lightly flavored with mint and tarragon. A really cool beer to brew at home.

Ingredients:

Malts

15 lbs Pale 2-row

1 lb White Wheat Malt

8 oz Flaked Barley

6 oz. Flaked Oats

Hops

1 oz. Columbus 15%a, 60 minutes

1/2 oz. Cascade 6%a, 40 minutes

1/2 oz. East Kent Goldings 5%a, 30 minutes

Other: 1/4 cup fresh chopped mint, 1/8 cup fresh chopped tarragon

YeastWhite Labs WLP080 Cream Ale Yeast Blend or Wyeast 2112 California Lager

Dry-Hops: 1 oz Sorachi Ace

Instructions:

Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above. Add herbs during last 5 minutes of the boil.

Ferment at 63-68 degrees.

Rack to secondary and age for 5-6 weeks. Add dry hops for the last 7 days.

    not really my favorite style but it was my first herbal beer and was a learning experience. That said, I got several compliments on what a great beer it is (mostly females).
