All Grain HomeBrew Smoked Stout Recipe

Profile: HomeBrew recipe for a Peat Smoked Stout, similar to Newburgh Peat Smoked Stout. Medium-light bodied session-style stout with smoky and roasty flavors. Dry finish with medium hop bitterness.

Ingredients:

Malts

6 lbs Pale 2-row

1 lb Peat-Smoked Malt

8 oz. Roasted Barley

6 oz. White Wheat

6 oz. Flaked Barley

4 oz. Aromatic Malt

4 oz. Chocolate Malt

3 oz. Black Patent

Hops

1 oz. Fuggles 5%a, 60 minutes

3/4 oz. East Kent Goldings 5%a, 60 minutes

1/2 oz. Fuggles 5%a, 30 minutes

1/2 oz. East Kent Goldings 5%a, 20 minutes

Yeast: White Labs WLP007 Dry English Ale or Wyeast 1056 American Ale

Instructions:

Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 63-68 degrees.

Rack to keg or secondary and age for 3-4 weeks.
