All Grain HomeBrew Recipe for a Berliner Weisse

Profile: HomeBrew recipe for a Berliner Weisse style sour beer brewed with rye malts, similar to Newburgh Roggensauer. Light-bodied and effervescent with flavors of tartness and mildly spicy rye malt. Refreshing finish.

Ingredients:

Malts

7  lbs Rye Malt

8  oz. Flaked Rye

Hops

1/4 oz. Strisselspalt 4%a, 60 minutes

Other: 1 lb of rice hulls (to help with a sticky rye mash)

YeastWyeast 3191 PC Berliner Weisse Blend (contains Ale yeast, Brett, and Lacto) or White Labs WLP630 Berliner Weisse Blend (contains German Weizen Ale yeast and Lacto)

Instructions:

Mash all grains (with rice hulls mixed in):

Step Mash: 125 degrees for 30 minutes, then raise to 150 for 60 minutes

Sparge at 170 degrees. (sparge slower than your average beer due to the sticky thick rye mash)

One hour boil with hop regimen above.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 4 months. (Test small sample monthly to see how sourness progresses. Longer aging will increase the sour flavors.) Carbonate at a high level for proper mouthfeel.
