All Grain India Red Ale Recipe
Profile: HomeBrew recipe for an India Red Ale, similar to Ninkasi Dawn of the Red. Medium-bodied red ale with huge notes of tropical fruit and citrusy hops. Dry finish with high hop bitterness.
Ingredients:
Malts
11.5 lbs Pale 2-row
1 lb Cara-Red
8 oz. Crystal 60
12 oz. Crystal 80
8 oz. Flaked Barley
Hops (Pellets)
1 oz. Galena 12%a, 60 minutes
1/2 oz Millennium 13%a, at 60 minutes
1 oz Ahtanum 6%a, at 15 minutes
1/2 oz Mosaic 11%a, at 15 minutes
1/2 oz El Dorado 15%a, 10 minutes
Yeast: White Labs WLP001 California Ale Yeast
Dry-Hop: 1/2 oz Mosaic, 1/2 oz El Dorado
Instructions:
Mash all grains for 1 hour at 152 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment at 63-68 degrees.
Maybe the Millennium should be moved to 30 mins then it would be closer to the 75 IBUs?
On the Ninkaski website it says they also use black malt. I guess maybe an oz or so to give it a little bit of rostiness. I would also dry hop with 1 oz each of Mosaic and El dorado instead of 1/2 an ounce.
The hopping here can’t be right, can it? Beersmith gives me over 100 IBU with that hop regimen.
