All Grain Imperial Stout Recipe

Profile: HomeBrew recipe for an Imperial Stout, similar to Ninkasi Imperiale Stout. Full-bodied with a creamy mouthfeel. Flavors of roasted coffee, caramel, toffee, molasses, and black licorice. Smooth finish with medium hop bitterness.



15 lbs Pale 2-row

2 lb Munich Light

10 oz. Crystal 80

10 oz. Flaked Barley

8 oz. Roasted Barley

4 oz. Black Patent

4 oz. Carafa III


1 oz. Nugget 13%a, 60 minutes

1 oz. Nugget 13%a, 30 minutes

1 oz. Nugget 13%a, 15 minutes

YeastWLP007 Dry English Ale or Wyeast 1098 British Ale


Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 63-68 degrees.

Rack to keg or secondary and age for 7-8 weeks.
