All Grain HomeBrew Czech Style Amber Lager Recipe

Profile: HomeBrew recipe for a smooth session-style Czech Amber Lager, similar to Notch Polotmavy. Medium-light bodied with smooth toasted malt flavors, mild caramel sweetness and a light spicy hop notes. Crisp finish with moderate bitterness. Amber color comes from a very small amount of de-bittered black malt which adds color without producing any roasty or bitter flavors.



9.5 lbs Vienna Malt

8 oz. Melanoidin

2 oz Carafa III


1 oz. Czech Saaz 4%a, 60 minutes

1 oz. Czech Saaz 4%a, at 30 minutes

1/2 oz. Czech Saaz 4%a, at 15 minutes

1/2 oz. Czech Saaz 4%a, at flameout

YeastWhite Labs WLP802 Czech Budejovice Lager Yeast or Wyeast 2278 Czech Pils


Mash all grains for 1 hour at 150 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Chill down to 50F and pitch yeast.

Ferment for about 10-14 days until primary fermentation just finishes.

Diacetyl Rest: Raise beer temp to 62-65F for 2-3 days.

Rack to keg or secondary and start cold-aging process. If possible taper temperature down 5-7 degrees per day from Diacetyl rest to 35F. Cold age at 35F for 3-4 weeks.
