Profile: HomeBrew recipe for a Cream Ale, similar to Peekskill Brewery Cream Ale. Aromas of sweet fruit and malt. Medium-light bodied with a creamy mouthfeel and smooth malty flavors. Crisp finish with moderately low hop bitterness.
9 lbs Pale 2-row
8 oz. Honey Malt
8 oz. Crystal 60
8 oz Flaked Maize
1/2 oz. Palisades 10%a, 60 minutes
1/2 oz. Palisades 10%a, 20 minutes
1/2 oz. Palisades 10%a, at flameout
Mash all grains for 1 hour at 152 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment at 63-65 degrees.
Rack to secondary and age for 3-4 weeks.
