All Grain HomeBrew Recipe for a Berliner Weisse

Profile: HomeBrew recipe for a Berliner Weisse sour beer, similar to Peekskill Brewery Simple Sour. Light-bodied and effervescent with crisp wheat and sour flavors. Almost no hop presence. Low ABV and refreshing. Relatively long aging period with a yeast blend containing Brettanomyces is required to get the proper character of the beer.



7 lbs Wheat Malt

1.5 lbs Flaked Corn


1/2 oz. Hallertauer 5%a, 30 minutes

Other: 1 lb of rice hulls (to help with sticky wheat mash)

YeastWyeast 3191 PC Berliner Weisse Blend (contains Ale yeast, Brett, and Lacto) or White Labs WLP655 Sour Mix 1 (contains Brettanomyces, Lactobacillus, and Pediococcus)


Step Mash all grains with rice hulls mixed in:

30 minutes at 122 degrees (protein rest)

60 minutes at 148 degrees

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 4 months. (Test small sample monthly to see how sourness progresses. Longer aging will increase the sour flavors.)
