All Grain HomeBrew Recipe for an Unfiltered Rye Beer

Profile: HomeBrew recipe for an unfiltered Red Rye Beer. Similar to a German Roggenbier, but this recipe uses a Belgian Wit yeast which which avoids banana and clove notes. Instead, you get more citrus and a touch of tartness.The addition of Citra hops near the end of the boil provide flavors of passion fruit and mango. Beer should come out a hazy red-mahogany color, with some vibrant flavors.



6 lbs Pale 2-row Malt

6 lbs Rye Malt

8  oz. Crystal Rye (or Crystal 80 if not available)

4 oz. Chocolate Rye


1 oz German Magnum  14%a, 60 minutes

1/2 oz. Citra 11%a, 15 minutes

1/2 oz. Citra 11%a, at 5 minutes


12 oz. Rice Hulls (mix with grain in mash – helps the sparging with a sticky wheat mash)

YeastWhite Labs WLP400 Belgian Wit or Wyeast 3944 Belgian Witbier


Mash all grains with rice hulls for 1 hour at 148 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

At flameout stir in grapefruit zest, bitter orange, and coriander.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 3 weeks. Carbonate relatively high to enhance refreshing character of this beer.
