All Grain HomeBrew Recipe for a Dry-Hopped Double Belgian Wit

Profile: HomeBrew recipe for a strong Belgian Wit dry-hopped with Sorachi Ace hops. Bold aromas of lemony citrus and Belgian yeast. Medium-bodied with a creamy texture. Flavors of citrus, spice, and fresh wheat. Crisp finish with moderate bitterness.

Ingredients:

Malts

9 lbs Pale 2-row Malt

4.5 lbs. White Wheat Malt

1 lb Un-malted Wheat

12 oz. Flaked Oats

8 oz. Acidulated Malt

Hops

1 oz Perle 8%a, 60 minutes

1/2 oz. Sorachi Ace 11%a, 10 minutes

Other

12 oz. Rice Hulls (mix with grain in mash – helps the sparging with a sticky wheat mash)

1/2 cup bitter Curacao orange peel

1 tablespoon fresh crushed coriander seed

YeastWhite Labs WLP400 Belgian Wit or Wyeast 3944 Belgian Witbier

Dry-Hops: 1 oz. Sorachi Ace

Instructions:

Step Mash all grains with rice hulls:

30 minutes at 122F (protein rest)

60 minutes at 148F

Sparge at 170 degrees.

One hour boil with hop regimen above.

At flameout stir in bitter orange, and coriander.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 5 weeks. Add dry hops for the last 7 days.
