All Grain Scottish Strong Ale Recipe

Profile: HomeBrew recipe for a Strong Scottish Ale. Full-bodied with flavors of caramel malt, toasted malts, and mild earthy hops. Clean finish with moderate hop bitterness.

Ingredients:

Malts

16 lbs Golden Promise Malt

8 oz Munich Dark

4 oz Crystal 60

4 oz Crystal 80

4 oz Crystal 120

4 oz Special B

2 oz. Carafa III

Hops

1 oz Northern Brewer 9%a, 60 minutes

1 oz East Kent Goldings 5%a, at 30 minutes

1 oz East Kent Goldings 5%a, at 15 minutes

YeastWhite Labs WLP028 Edinburgh Scottish Ale Yeast

Instructions:

Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

90 minute boil with hop regimen above (longer boil to add some caramelization to the wort).

Ferment at 63-68 degrees.

Rack to keg or secondary and age for 6-7 weeks.
