All Grain India Brown Ale Recipe

Profile: HomBrew recipe for an India Brown Ale similar to Terrapin Hop Karma. Rich, chocolaty and bitter with flavors of dark caramel, toasted malts, and earthy hops. Dry finish with moderately high hop bitterness.



9.5 lbs Pale 2-row

12 oz. Dark Munich

12 oz. Victory Malt

8 oz. Briess Special Roast Malt (50L)

8 oz. Crystal 60

6 oz. Crystal 77 (or Crystal 80)

6 oz. Chocolate Malt

Hops (Pellets)

1/2 oz. Nugget 13%a, 60 minutes

1/2 oz. Chinook  13%a, 30 minutes

1/2 oz. Centennial 10%a, 15 minutes

1/2 oz. Willamette 5%a, 10 minutes

YeastWhite Labs WLP007 Dry English Ale or Wyeast 1318 London Ale III

Dry-Hops: 1 oz Columbus (whole leaf)


Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Ferment at 63-68 degrees.

Rack to secondary or keg and age for 5 weeks. Add dry-hops for the last 7 days.

    I brewed this about 6 months ago but used 45L Warminster brown malt instead of the special roast. It was a bit harsh the first few weeks in the bottle but after about a month it tasted great. More of the hop aroma came through but there was still some nice rostiness.
    It tasted unbelievable with a 12 year old Bowmore Whisky. It was all gone within 2 months but I think it would have developed further if I kept it longer. I never had the original so I can’t compare but the only thing I would change next time is hold onto a few bottles for 6 months or more to see how it develops. Think I will re-brew it in September.
