All Grain HomeBrew Recipe for a Belgian Wit

Profile: HomeBrew recipe for a Belgian Wit similar to The Lost Abbey’s Witch’s Wit. A classic Wit with aromas of citrus and spice. Light-bodied and refreshing with a slightly tart finish. A perfect summertime beer.



5 lbs Pale 2-row Malt

4 lbs. White Wheat Malt

8  oz. Flaked Oats

6 oz. Flaked Wheat


1/4 oz German Magnum  14%a, 60 minutes

1/4 oz. Czech Saaz 5%a, 30 minutes


12 oz. Rice Hulls (mix with grain in mash – helps the sparging with a sticky wheat mash)

Zest from 2 grapefruits

1/4 cup bitter Curacao orange peel

1 tablespoon fresh crushed coriander seed

Yeast: White Labs WLP400 Belgian Wit or Wyeast 3944 Belgian Witbier


Mash all grains with rice hulls for 1 hour at 148 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

At flameout stir in grapefruit zest, bitter orange, and coriander.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 3 weeks. Carbonate relatively high to enhance refreshing character of this beer.
