All Grain Vienna-Style Lager Recipe
Profile: HomeBrew recipe for a Vienna-Style Lager. Smooth and malty with a crisp finish.
Ingredients:
Malts
4 lbs German Pilsner 2-row
3 lbs Munich Malt
3 lbs Vienna Malt
8 oz. Crystal 60
4 oz. Crystal 80
4 oz. CaraMunich
3 oz. Carafa III
Hops
1/2 oz. German Magnum 14%a, 60 minutes
1/2 oz. German Hallertau 4%a, at 20 minutes
Yeast: White Labs WLP830 German Lager Yeast or Wyeast 2206 Bavarian Lager
Instructions:
Mash all grains for 1 hour at 152 degrees.
60 minute boil.
Chill wort and pitch yeast at 52F.
Primary ferment 10 days.
Diacetyl Rest – 2 days
Lager at 35F for 8 weeks.
