All Grain White IPA HomeBrew Recipe 

Profile: HomeBrew recipe for a White IPA, similar to Westbrook’s The Raver. Brewed with pale malt, wheat malt, and flaked grains. Flavored with citrus peel. Bright citrusy aromas and a medium-body with a creamy texture. Crisp finish with moderately high hop bitterness and mild tartness.

Ingredients:

Malts

12 lbs Pale 2-row Malt

3 lbs. White Wheat Malt

8  oz. Flaked Oats

6 oz. Flaked Wheat

6 oz. Acidulated Malt

Hops

1 oz Magnum  14%a, 60 minutes

1/2 oz. Amarillo 8%a, 30 minutes

1/2 oz. Centennial 10%a, 30 minutes

1/2 oz. Centennial 10%a, 15 minutes

1/2 oz. Amarillo 8%a, at flameout

Other

12 oz. Rice Hulls (mix with grain in mash – helps the sparging with a sticky wheat mash)

Zest from 1 grapefruit and 1 large lemon

1/4 cup bitter Curacao orange peel

YeastWhite Labs WLP400 Belgian Wit or Wyeast 3944 Belgian Witbier

Instructions:

Mash all grains with rice hulls for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

At flameout stir in grapefruit zest, lemon zest, and dried bitter orange.

Ferment at 65-68 degrees.

Rack to keg or secondary and age for 5 weeks.
