All Grain 100% Brett Fermented Golden Session Ale Recipe
Profile: Golden Session-Ale fermented with Brett yeast and lightly hopped with Nelson Sauvin hops. Notes of clean tropical fruit, white grapes, citrus, and earthy yeast. Dry finish with moderate hop bitterness.
9 lbs Pilsner 2-row
8 oz. Crystal 20
8 oz. CaraPils
8 oz. Acidulated Malt
1/2 oz. Nelson Sauvin 12%a, 60 minutes
1/2 oz. Nelson Sauvin 12%a, 20 minutes
Mash all grains for 60 minutes at 150 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment warm at 70-75 for 12-15 weeks to let the slow working Brett yeast perform.
