All Grain Smoked Scottish Lager Recipe
Profile: HomeBrew recipe for a Smoked Lager, similar to Wolverine State Brewing Smoking Gun. Crisp and malty light-brown colored ale with notes of dark caramel, smoke, and toasted malt. Smooth, clean malty finish, with moderate hop bitterness.
10.5 lbs Maris Otter
1 lb Peat-Smoked Malt
8 oz. Crystal 80
6 oz. Crystal 100
1 oz. East Kent Goldings 5%a, 60 minutes
1 oz. East Kent Goldings 5%a, 20 minutes
Mash all grains for 1 hour at 150 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Chill down to 50F and pitch yeast.
Ferment for about 10-14 days until primary fermentation just finishes.
Diacetyl Rest: Raise beer temp to 62-65F for 2-3 days.
