All Grain 100% Brett Fermented American Pale Ale Recipe
Profile: American Pale Ale fermented with Brett yeast and 100% hopped with Amarillo hops. Notes of clean tropical fruit, tangerine, light grapefruit, and earthy yeast. Dry finish with medium hop bitterness.
12 lbs Pale 2-row
8 oz. Crystal 40
8 oz. CaraPils
1 oz. Amarillo 8%a, 60 minutes
1 oz. Amarillo 8%, 20 minutes
1 oz. Amarillo 8%, 5 minutes
Mash all grains for 60 minutes at 152 degrees.
Sparge at 170 degrees.
One hour boil with hop regimen above.
Ferment warm at 70-75 for 12-15 weeks to let the slow working Brett yeast perform.
