All Grain Imperial Oktoberfest Recipe

Profile: Big malty lager with heavy toasted malt flavors and mild sweetness. Smooth finish with moderate noble hop bitterness. Brewed with German malts, hops and yeast.



7 lbs German Pilsner 2-row

6 lbs Munich

5 lbs Vienna

6 oz Caramel 40

6 oz. CaraMunich


1/2  oz. German Magnum 14%a, 60 minutes

2 oz. German Tettnang 4%a, 30 minutes

1 oz. German Tettnang 4%a, 15 minutes

YeastWhite Labs WLP820 Oktoberfest


Mash all grains for 1 hour at 152 degrees.

Sparge at 170 degrees.

One hour boil with hop regimen above.

Chill down to 52F and pitch yeast.

Primary ferment for 7-10 days.

Lager for 8 weeks at 35F.
