Craft Brewed Saisons Flavored With Spices, Citrus, and Other Fruit

The main flavor driver behind Saisons are the special farmhouse ale yeasts which can provide interesting notes of peppery spice, citrus, and tropical fruit, making them full-flavored and refreshing on their own, without any added spice or fruit.

Brewers looking to add another layer of flavor or subtle hints of herbs and spices have a added a wide variety of special additions for flavoring, and craft brewers (American in particular), love to spice-up and flavor their Saisons, with 28% (44 out 160 Saisons reviewed on the site), having added spices, citrus, and other fruits in them:

Pipeworks out of Chicago has released several spiced and flavored Saisons:

Saison Poivre Rose (7%) is flavored with pink peppercorns and black Tellicherry peppercorns.

Saison Du Soleile (7%) is infused with grapefruit peel and grapefruit juice.

Saison Poivre Vert (7%) is an interesting Saison flavored with cucumber, green peppercorns, and celery seed.


New Holland offers Four Witches (7.3%), a Black Saison flavored with star anise, black pepper, coriander, and grains of paradise. The malt bill for the beer includes barley, wheat, rye, and oats. | Brewed in Holland, MI


Bottle Logic offers a Tattered Prince (7.3%, 27 IBUs) French Farmhouse Style Saison flavored with ginger, coriander, and orange peel. | Brewed in Anaheim, CA 


Tallgrass Brewing’s Wild Plum Farmhouse Ale (5.6%, 20 IBUs) is a Saison brewed with fresh plums. Offered as a summer seasonal. | Brewed in Manhattan, KS


Against the Grain Chris Framboise (7.1%, 16 IBUs) is a Sour Raspberry Saison, aged with raspberries and fermented with wild Brett yeast. | Brewed in Louisville, KY 


Trinity Brewing out of Colorado Springs produces several spiced Saisons:

Oh Face (6.5%) is a Farmhouse Style Saison flavored with lavender, and aged in French oak with three strains of wild Brettanomyces yeast.

Chardonnay Barrel-Aged Saison Man (4.9%) is flavored with grains of paradise and aged in oak white wine barrels with wild Brett yeast.

Elektrik Cukumbahh Saison (6.4%) is brewed with English cucumbers and lemon zest.

Farmhouse Fantome Saison (6.4%) is brewed with strawberries and yams.

Le Capitaine (10.4%) is brewed with pumpkin, candied endive, and cacao nibs.

Pappy Legba (13%) is an Imperial Saison aged on fresh cherries.

Merle, Saison Nocturnum (12.2%), is an Imperial Dark Farmhouse Saison, flavored with sarsaparilla, sassafras, coriander, hibiscus, and cumin.
